1st Course

BAKED GOAT CHEESE WITH GARDEN LETTUCES, ROASTED FIGS, PEARS, AND TOASTED ALMONDS
2107 Jayson Sauvignon Blanc - Napa Valley, California
This wine reveals classic Napa Sauvignon Blanc expression with fresh aromas of pineapple, white peach, grapefruit, and ripe golden berries, as well as hints of cool slate and lime zest. The complex fruit carries over onto a soft, rich palate balanced with firm acidity.

2nd Course

PAN SEARED SEA BASS, SERVED WITH BUTTERED LEEKS, GRILLED ASPARAGUS, AND PICKLED RADISH
2015 Jayson Chardonnay – Napa Valley, California
Luminous gold in color, this wine presents fresh and bright aromatics of neroli and honeysuckle, grounded by notes of stone fruit and vanilla bean. A silky, viscous mouthfeel supports the bursting flavors of melon and citrus. The long, mouthwatering finish has bright acidity with lingering grapefruit peel flavors and a hint of minerality.

3rd Course

ROASTED QUAIL WITH WILD MUSHROOM RAGU, SERVED WITH ACORN SQUASH PUREE AND HEIRLOOM CARROTS
2014 Wayfarer Pinot Noir – Fort Ross, Seaview, Sonoma County, California
The 2014 Wayfarer is comprised of 12 distinct clones; it shows a nose of delightfully nuanced red fruits, herb scented cherry, raspberry and cranberry. The palate is a lean, bright expression concentrating on fresh red fruits persisting through the finish.

4th Course

STRIP STEAK WITH MARCHAND DE VINS SAUCE, SERVED WITH FINGERLING POTATOES AND SAUTEED SPINACH
2014 Pahlmeyer Proprietary Red – Napa Valley, California
This wine has a deep garnet rim with a dark burgundy-hued core. A nose of sweet vanilla, cigar and blackberry carries over onto the soft, voluptuous palate. Ripe fruit flavors are accented with notes of licorice, graphic slate and unsweetened chocolate powder, while hints of dark roasted coffee show up on the very edges of the tongue.

Dessert

BALABAN’S HOUSE-MADE PECAN PIE
2007 Isole e Olena Vin Santo del Chianti Classico – Tuscany, Italy
Lovely golden-amber in color with an intense, open perfume of dried citrus peel, dried apricots and honey, giving way to a rich, luscious palate, with incredibly concentrated characters of honey, dried apricot and vanilla.
