Balaban's Featured in St Louis Magazine


Once again, Balaban's is featured in this month's edition of St. Louis Magazine.  This time, STLM gives kudos to the Grilled Cobia currently sourced and offered on the menu at Balaban's. Read the entire article.

Cobia is found in the warm waters of the Caribbean and throughout the Gulf of Mexico.  The flesh of the fish is peachy white with a grey/brown skin.  On the palate, the meat is dense like sturgeon, but also fatty like hamachi.   Cobia is rising in popularity as it is considered a delicious fish that is also sustainable. 

Chef D. Scott Phillips is searing the Cobia with a nice touch of seasonings served atop a bed of ancient grains, grilled asparagus, summer squash, and heirloom tomato chutney.  You won't want to miss this latest edition to the Balaban's menu.
