The Shafer Wine Dinner will be held on April 22nd, beginning at 6:30 PM.  This is a 5 Course Wine pairing dinner.  $110 per person plus tax and gratuity. Reservations are required.

The Shafer Family Winery has been producing wine in the Napa Valley, Stags Leap District of California since 1978. With a focus on sustainable, organic farming methods, the vineyard produces award wining Chardonnay, Merlot, Syrah, and Cabernet from it’s 205 acre vineyard.

Join us as we pair chef's menu creations with the wines of Shafer Winery.

Guests will be greeted with a Glass of Sparkling Wine and an Appetizer Reception

A credit card number will be required to confirm your reservation. Credit Cards will be charged for the full amount of the reserved seats unless the reservation cancelled prior to Noon the Friday before the event.


1st Course

“TROUT NANCY”- RAINBOW TROUT TOPPED WITH LUMP CRAB AND LEMON BUTTER SAUCE
2015 Shafer Red Shoulder Ranch Chardonnay-Carneros, California
This wine begins with a dark golden-hay color that dazzles in the glass. A strong floral component of jasmine invites on the nose, while sparkling acidity maintains a freshness amidst the integrated oak and delicious flavors of honeyed pear and crème brûlée.

2nd Course

DUCK SAUSAGE, BRAISED NAPA CABBAGE AND MOREL MUSHROOMS WITH A MERLOT CREAM SAUCE
2015 Shafer TD-9 Red - Napa Valley, CA
This was a beautiful vintage for Merlot. From the first pour the wine opens an of abundance enticing aromas and mouth-coating flavors of fresh summer berries, dark plums, and strawberries, fresh herbs and flowers all presented with juicy energy, surrounded by seamlessly textured tannins that will age attractively with cellaring.

3rd Course

ROASTED LAMB LOIN WITH GARLIC AND CHICKPEA PUREE AND SPINACH COULIS
2014 Shafer One Point Five Cabernet Sauvignon - Napa Valley, CA
Vibrant, complex aromas of ripe red and black fruit, lavender, and herbs fill the glass followed by pure, energetic flavors of dried cherry, blackberry, strawberry, licorice, and cocoa all pulled together with wet slate minerality, clean acidity, and the ripe, seamless tannins that are the hallmarks of this vintage.

4th Course

BRAISED BEEF SHORT RIBS WITH DUCHESSE POTATOES AND SUGAR PEAS, SERVED WITH A CABERNET REDUCTION
2014 Shafer Relentless Syrah - Napa Valley, CA
The 2015 bursts with bright, energetic aromas and flavors of fresh black cherry, black plum right from the tree, pomegranate, wet slate, peppercorn, lavender, and savory herbs. The flavors have long, beautiful length in the mouth and the wine’s classic Stags Leap District tannins offer structure and promise for delicious things to come in the cellar.

Dessert

GERMAN CHOCOLATE CAKE
NV Graham’s 10 Year Tawny Port.
This wine has a zesty, sweet floral aroma, with delicate, well-spiced flavors of apple tart, flan and cocoa powder. The plush, mouth-filling finish of cream, vanilla, and raspberry is fresh and balanced.
